I purchase vegetables because they are beautiful and I am optimistic that my children will have mysteriously grown to love vegetables in their sleep. Then I need to cook with said vegetables. Chicken fajitas in the crock pot are a great way to utilize tomatoes, bell peppers and savory onions. Delicious and kid friendly on a week night.
One issue I have with crock pots is that they create so much liquid from the foods that are cooking! I dislike when my chicken fajita weeps out of my tortilla and onto my plate. My solution is to transfer the cooked chicken (chopped or shredded) and the drained vegetables to a skillet and treat them to a quick sauté prior to serving.
Homemade tortillas on a week night? Of course. The kneading and the rolling are very therapeutic after a long day hunched behind a computer screen. My recipe makes 11 tortillas. What to do with any leftovers?
Warm with a drizzle of local honey. Sort of like a sopapilla. MMMMMMmmmmm. So good.
