Even city kids can take a trip into the country, visit a farm and meet the creatures that make them omnivores. Conscious choice includes letting children decide if they want that hamburger after letting the pretty cow eat hay out of their hands through the pasture fence.

For the marinating, I have a proprietary combination of rice wine, rice vinegar, tamari, ginger, garlic, lemon and Chinese five spice powder. I mix this together and reserve about 1/2 cup for plate side sauce plates. I cut four slits into each side of the body of the fish and submerge it in the remaining marinade for about an hour.
