My daughter was with her father for the weekend, well taken care of and well fed. My son, along with his good friend, headed down to the Rockford City Market. I was left to my own devices. Sweet!
This go around, I cut the squash in half, scooped out the seeds and fibers (like a muskmelon), and placed it cut side up on a pan. I rubed the cut sides with one teaspoon of olive oil and places two peeled garlic cloves in each cavity to roast along with the squash.
I first removed the garlic and smooshed (yes it is a technical term) the cloves into my serving bowl. Next, I shredded the squash strands with a fork.
I was skeptical that I would be able to - or even want to - eat an entire spaghetti squash. But I did, it was delicious!! This was my entire meal. However, if making as a side dish for a full supper, a single squash would serve four. Definitely now part of my regular repertoire.
