So, the call of glorious victory rang out “Winner Winner Chicken Dinner"
On the side, some pearl barley. I really like this as a side dish, a wonderful change from rice, pasta or potatoes. Barley is a member of the grass family, so basically I fed my kids grass seed for dinner. I cooked two cups of barley in two cups of chicken stock, then seasoned it with some cracked pepper, butter and parmesan cheese. I used the left overs to round out my week of lentil stew.
It was a great dinner, flavorful and I managed to sneak in some vegetables and healthy alternatives for my kids.
