1/4 cup mirin (rice wine)
1/4 cup soy sauce
2 TLBS honey
5 cloves of garlic, peeled and minced
2 inches of fresh ginger, minced
1/8 tsp. pure ground red pepper
That's it! Let the meat marinate, thread on bamboo skewers then grill or broil until cooked through, turning and brushing with the remaining marinade. (I broiled five minutes per side)
NOTE: Please, oh please, presoak the bamboo skewers in water while the marinade is cooking. If not, you will have burnt skewers like I did this evening.
