My pantry is now restocked, let the cooking begin. Chicken, mashed potatoes and broccoli are all favorites of my youngest. She was with her grandparents and then her father yet she was still homesick for Mom. Awwwwww.
Pan Roasted Broccoli
*for those who, like me, love the flavor but don't want to heat up the kitchen
during the warm summer months*
1 pound broccoli - chopped into bite sized pieces.
Cook the broccoli in 1/2 cup water in a large shallow sauce pan until you can pierce the thicker stems easily with a fork.
Drain off any remaining water.
Add 2 tablespoons butter to the broccoli in the pan. Liberally salt and pepper the buttered broccoli.
Cook over medium high heat undisturbed until browned, then stir and flip the broccoli over to brown on an additional side.
