I like baking from scratch. The zen of the measuring and mixing and pouring and frosting ... And of course the eating!
But sometimes life is so busy, there is no time for all that. Sometimes even I must bake a cake from a box mix.
Today is one of those days. But, there is a way to take your boxed cake mix to the next level. Substitution is the key to a homemade tasting cake from a box!!
For the water ... Substitute an equal amount of milk.
For the oil ... Substitute an equal amount of melted butter.
For the eggs ... Add one more egg than called for in the package instructions.
Mix and bake according to the package instructions.
Voila! Rich, moist, luscious 'homemade' cake in half the time!
