Vegetation eating is delicious! Whether cooking at home or dining out, for summer I am selecting vegetarian options.
This lunch was courtesy of Mary's Market, a locally owned bakery and cafe. Side note: I worked for Mary's Market for 1.5 years as a bread baker. A half portion of the veggie stack sandwich and a bowl of curried butternut squash and lentil soup.
The sandwich is one of my favorites- always my first choice at Mary's. Homemade 7-grain bread, dill havarti cheese, tomato, green pepper, cucumber and sprouts with a thin schmear of Dijon mustard. Such a delicious combination of balanced flavors and well married textures.
The soup, well, to begin with the texture was that of pablum. Overly puréed. The overriding flavor was of a mildly spicy Indian curry. A nice slow warming. But without any distinctive lentils or chunks of squash, the soup lacked balance and toothyness. I had about ten spoonfuls and left the rest in the bowl.
Overall Mary's Market has many delicious vegetation options. Highly recommended.
This is what remained from a vegetarian breakfast at Wired Cafe. So delicious!
A toasted English muffin, a liberal spreading of peanut butter, chopped apples, sunflower seeds, and a liberal drizzling of honey.
Wired has several vegetarion options for breakfast and lunch. Next time I am looking forward to the lemon butter pizza!
How are you incorporating more vegetables into your summer diet?
