Mom having a dinner meeting does not mean that the kids do not eat dinner. It does mean that the kids eat a dream dinner. OK, maybe just my kid's dream dinner.
Dinner #1: Bacon and homemade French Toast.
French Toast is so easy to make from scratch. It took longer for my eletric stovetop to heat than it did to whip up the egg dip for the bread. Seriously, I have been know to make this on a school morning to feed a cranky child before sending them off to school.
Mix your egg dip, I use a pie plate.
- Two eggs
- 1/2 cup milk
- 1 tlbs cream (I happened to have some on hand from my son's birthday cake - not a necessity)
- 2 tsp. pure vanilla extract (this is a MUST!)
- Cinnamon and Sugar to sprinkle on while it cooks (optional)
- Butter and syrup for serving.
I whisk together (would it be more accurate to say fork together?) the eggs, milk, cream and vanilla together until well blended.
with more cinnamon and sugar and cook an additional 2 minutes. Serve hot.
Dinner #2: Olympic Tavern in Rockford Illinois.
One of my favorite local places to eat, drink, have a meeting, go on a date, meet a girlfriend for a powwow session, and simply be merry. Unfortunately, I did not eat with my children in anticipation of this dinner meeting. So I was really hungry, but it was also 8:30, so I ordered a side of steamed vegetables. They were delicious. Squash, beans, a bit of onion in a light vinaigrette. I was so hungry I forgot to take a picture until there were only two beans left in the dish. Which should be taken as a ringing endorsement to order the vegetables at the Olympic!
Dinner #3: a plain toasted bagel with plain cream cheese and a cup of ginger tea.
