I raided the last bits from the vegetable bin; mushrooms, red pepper, little sweet grape tomatoes, onions and garlic. I pulled a single chicken breast from the freezer - a .75 pound chicken breast. That is plenty of meat when cooked and diced and added to this dish. Since I was cooking this the day after the French toast and bacon supper, I used the left over bacon. If I were shopping for this recipe, I would suggest pancetta, but the bacon worked wonderfully.
This pasta dish, born from my reluctance to go to the grocery store so I used what was on hand, will now be in our regular suppertime rotation. Bon Appetite!
