A pound each of diced boneless, skinless chicken breasts and a pound of linguini.
Delicious dinners tend to begin with onions and garlic sautéing in olive oil. I added the tomatoes with their liquid. Next the diced chicken. A handful of oregano and basil plus some fresh cracked black pepper. Stir together well, cover and let simmer.
What's so nice about this combination is that it isn't too acidy from a pure tomato sauce, and it isn't too heavy and rich from a pure cream based alfredo sauce. Kid friendly and mother approved.
