I don't keep lunch meat (whatever that means to you) in my house. We just don't eat it faster than it can spoil. I do, however, keep flour tortillas on hand at all times. The youngest isn't a sandwich person but she will eat most anything on a tortilla.
I smeared half a tortilla with some peanut butter. I added some fresh banana slices. I rolled it up. That's it. Simple, filling, protein laden and kid friendly.
I am starting to accept that it is perfectly okay for me not to cook a huge supper every evening. We were all happy with the roll ups.
