I have tried seven different white bread recipes before hitting on this one, my go to for making white sandwich bread.
I can get an amazing rise to this recipe, and when I put 1100 grams of dough into a standard loaf pan, I get this huge domed top, glazed with egg wash. There is a distinctive golden crust compared to the white interior. In mimicking store bought, this is pretty close.
I first made a full recipe on a warm summer day, I ended up with two huge braided loaves of challah bread. Yes, the recipe that I use for my traditional loaf of white bread is a challah bread recipe
Thus far, I have not had a loaf grow mold. Perhaps because we eat it too fast. Perhaps because it is winter and the usual instigators for moldy bread - namely heat and humidity - are not present.
My biggest problem with homemade bread is the slicing; I am a wonky cutter in need of practice. By the time we work our way to the end, we have a weird wedge. I use this wedge to make homemade bread-crumbs.
The recipe? Just seven ingredients and not a lot of hands on time. The rising will take a few hours, but the dough doesn't need babysitting.
