How to prepare roast beef when you don't feel like roast beef? At least not in the American traditional sense of beef, potatoes, carrots, and gravy. Being half awake in the wee hours of any given weekday morning, I lazily threw together the KC BBQ Brisket recipe utilizing this chuck roast.
This is the beef, just after seasoning each side then immersing in the wet mop for a day of cooking. I will figure out the rest of dinner once I am three cups of coffee into my day.
BBQ sandwiches - the notion struck me this morning at work. I just needed to pick up buns. Everything else was in place. Arriving home, I remove the very tender beef from the crock pot, poured off all the liquid, trimmed the beef of all visible fat, returned the meat to the crock pot and added a very small bit of BBQ sauce.
I rounded out the meal with oven roasted potato wedges, soft buns, a bit of cheese and Heinz 57. A delicious weeknight supper.
