In the end, this was only 15 minutes of actual hands one time, most of the work was done by simmering and we had dinner on the table in an hour.
To this I added 12 cups of chicken stock, three cups of diced chicken (pulled from Sunday's roast chicken). I placed a lid askew on the pot, set the temperature to a low simmer and went about with other things.

I will take that as a compliment.
