I still am working towards having a vegetable with every meal. Sometimes the problem is me, not the kids. I may not be in the mood to cook a third or fourth item for that evening's meal. Tonight the flavors for the cauliflower were marjoram and balsamic vinegar. I liked it, but I wish the vinegar had caramelized more onto the vegetable. H.C. suggests reducing the balsamic on the stove top first into a syrup, prior to drizzling on the cauliflower.
My salmon? Citrus juice, I prefer something from the orange family. Then a healthy drizzle of soy sauce, an even healthier dash of Chinese five spice powder on each piece of salmon, some freshly grated garlic and ginger, salt and pepper to taste. That's it. I line the pan with aluminum foil to mitigate the mess.
But, as teenagers are perpetually hungry, I was making the boys fried egg bagel sandwiches at 10pm.
