Sometimes cooking is taking the lazy git way out; mix, stir, pour, slice, seal, fridge.
And seriously, no cooking whatsoever.
My recipe is modified - I think - from anything you will find on the net. It changes each time based on which fruit in my kitchen is at the tipping point between ripe and rotten. I then choose the spices to compliment the fruit.
This is a dairy based meal, so vegitarian but not vegan. I use kefir - I like Lifeway brand- and yogurt - I love Siggi Icelandic style - with a splash of milk and another of real vanilla extract. Some oats, a bit of chia seeds, some spices and bite sized fruit pieces. I take this to work, but I keep it in an insulated lunch bag or put it in the company fridge.
Pictured is a double batch, poured into pint mason jars, then capped and refrigerated. Honestly, with Irish, often called steel cut oats, it takes more than just one overnight for the oats to fully soften. I have yet to have a batch of these go 'bad', these six are all for me. I add the fruit last, then stir it in when I am eating it. I have used bananas, blackberries, raisins, and these strawberries. Mix it up to suit what's on hand and what you like.
The bonus? No added sugar! Quick, easy, healthy, portable. Happy Breakfast!
