Halibut is pricy, about $20 per pound, but when you consider how much it costs to feed my crew from a fast food joint - not to mention how unhealthy that is - this halibut is comparatively inexpensive.
One tablespoon olive oil, one tablespoon butter. When that is sizzling in a large skillet and the butter is beginning to foam, add the fish. Lightly salt and liberally pepper the exposed side of the fillets. Let it cook undisturbed until the fish is opaque 1/2 through - about 5 minutes, then carefully flip over. Lightly salt and liberally pepper the fish then squeeze the juice of one fresh lime over the fillets as they cook in the pan. Cook an additional 4-5 minutes. Sprinkle with one tablespoon minced cilantro. Serve hot with rice.
