I look in the fridge and pantry to see what is on hand. Pork chops, apples, potatoes and onions. Sounds like a one pot supper to me.
These were thin pork chops. I cut the apples and the potatoes the same thickness as the pork. I thinly sliced one small onion, and had ready some dried rosemary from my summer garden.
A mixture of olive oil and butter slicked the bottom of the pan. I added the potatoes first, as they will take longer to cook than the pork. Next the pork chops, generously salted and peppered on each side. Finally the apples and onions. I put the lid on the pot, only lifting it to occasionally stir and flip.
Delicious and filling, ready in under 30 minutes. Happy Friday!
